In the many decades since the House Restaurant began serving diners in its current location on the first floor of the Capitol in 1857, its menus changed both in content and appearance. This 1944 version has a simply decorated cover and a striking salmon hue. While clams and 20 cent beers still appear on the menu—as they had a decade before—the chef also introduced lighter fare, like broiled Canadian bacon or chilled stuffed tomatoes.
